Artisanal Maple Syrup
Others may try to lure you with fancy words like, real, original, terroir, etc but true artisanal syrup like our Batch 4 comes from a lifelong commitment to the stewardship, and caring for our 23 acres of prime Northern Ontario Bush.
With over 1500 maple trees ranging from seedlings to towering mature 70 foot parents, we carefully nurture each along, until they are ready to produce maple syrup that is unequaled by any others.
We don’t name every tree, but an extensive network of carefully groomed trails take you through the “Dark Trail” to “Yvon’s Grove”, past the deer feeder to “Luc’s Folly”, down the “Rocky Road”, around Jaden’s Corner to the Sugar Shack. And this is where the magical transformation from sap to syrup happens.

Our annual adventure starts in early fall with a culling of dead standing pine and Maples that is carefully cut and stored away to fuel the fires come spring.
In December and January, you will find us carefully grooming the trails and surveying the property by Snowshoe, planning the upcoming season.
In late February and early March, we begin tapping the trees and hanging our aluminum buckets throughout the bush, selecting approximately 400 trees for duty each year.
Late March and early April, afternoons and evenings are spent collecting sap from the individual buckets and boiling it down to our wonderful syrup.
Why Batch 4?
Batch 4 marks the culmination of a successful season and is the most robust and hearty of each year’s syrup.
Tasting notes include: Traces of woodsmoke, hints of Fresh northern air, laughter, morning frost and sunshine
The more discerning connoisseurs have actually told us that they can detect a sense of history,
the sounds of laughter, and the taste of memories of simpler days.
And overlaying all of the above, sweet maple goodness, just like it was meant to be……
